Oregon Grape Jelly

The following jelly recipe was improvised based on my experience making four previous jam recipes. I was not too sure how to go about making jelly, but I used my experiences making jam to figure it out. Unfortunately, this jelly remains too thin. It should have a higher content of pectin.

Oregon Grape Jelly

1 cup Oregon-grape juice

1/4 cup Roger's Organic Sugar

1 tsp pectin


Strain boiled Oregon Grapes through a jelly bag to extract juice. Mix with pectin in a saucepan and bring to a rolling boil. Add sugar and keep boiling for a few minutes. The jelly will thicken upon cooling.
